Back in 1810, Joseph Gay-Lussac recognizied that a key element of the process was the breakdown of the grape's sugar content into alcohol and carbon dioxide. But more than forty more years were to pass before Louis Pasteur identified the catalyst for that breakdown as the microscopic organisms that we call yeast.
